How does the rich claim to be poor when sued, ie. O.J. Simpson?

The rich have many tools to hide their funds. They can set up a trust account, put their money into corporations, put their money into non-profits that they set up themselves and then that non-profit provides them with car, phone, home, etc. They essentially put their money in the name of another individual or entity while still having access to and the free use of the money.
